The Caledonian Edinburgh is home to two inspired eateries - The Pompadour by Galvin and Galvin Brasserie de Luxe - from the renowned Michelin-starred chefs Chris and Jeff Galvin.
In 2005 the Galvins established their reputation as a team in their own right by opening Bistrot de Luxe in London’s Baker Street. The success of the venture has led to the creation of the renowned Galvin at Windows, on the 28th floor of the London Hilton on Park Lane, the multi award-winning 2102 La Chapelle, and Galvin Demoiselle, overlooking the famous Food Hall in Harrods.
The Galvin brothers hold two Michelin stars and ten AA Rosettes, and were named AA Chefs' Chef of the Year in 2011.
The Pompadour - The à la carte and tasting menus at The Pompadour are imbued with the ethos of peerless style and sophistication, and feature the best in traditional French haute cuisine, with classical French-inspired dishes and a selection of Scottish and English favourites, prepared using the finest, locally-sourced, seasonal ingredients derived from the Galvins’ network of Scottish suppliers, growers, farmers and fishermen. A specially selected array of French regional wines has been chosen by the highly experienced sommelier and the restaurant also features a private speciality cocktail salon for pre-dinner apéritifs or coffee and digestifs after dinner, with spectacular views of the castle and cityscape.
Galvin Brasserie de Luxe - Created by the Galvin brothers, the menu features a blending of classic French brasserie favourites and local seasonal specialities, to include Prix Fixe, plats du jour, Scottish Crustacea and a la carte menus. The kitchen is overseen by award-winning executive chef Craig Sandle.
The Caley Bar - The Caley Bar offers a traditional Scottish welcome in elegant and relaxed surroundings. It is the ideal venue for drinks after work or before a meal, when the bar buzzes with lively conversation and, laughter. Choose from classic cocktails, a wide range of Scotch Whiskies, fine wines and Champagnes, soft drinks and hot beverages. The sumptuous sharing platters feature expertly crafted mouth-watering creations that fuse local delicacies with flavours and textures from around the world.
Peacock Alley Lobby Lounge - Peacock Alley represents the historic heart of The Caley, and is imbued with the peerless style and sophistication of this famous former railway hotel.
