Restaurant Fortaleza do Guincho was opened in 1998. Acclaimed French Chef Antoine Westermann introduced a haute cuisine restaurant, which quickly became a reference in Portugal. In 2001 the restaurant received a Michelin star, held until today. Over the years, some of the modern references in Portuguese cuisine passed through Fortaleza do Guincho , which caused the restaurant to acquired the status of a 'school'.
Originally with a classic French base, Portuguese products and traditions have been gaining more and more prominence in Fortaleza do Guincho. Among the many prizes and distinctions awarded to the restaurant over the past few years, is the Platinum Fork in 2014 by Boa Mesa Boa Cama guide, by the Portuguese newspaper Expresso.2015 is a banner year for the history of the restaurant and the history of high Portuguese cuisine. Miguel Rocha Vieira arrived in August as the new Executive Chef of Fortaleza do Guincho - the first time a Portuguese takes the reins of one of the most emblematic cuisines of Portugal.
Concept
The philosophy is based and inspired by the Atlantic, the background setting of the Hotel. The best fish and seafood from the Portuguese coast as well as highest quality of national products are a constant on the Guincho table, honored and created in every dish, every season, recognized by national and international press and critics.
Executive Chef - Miguel Rocha Vieira
Miguel Vieira, 37, was born and lived in Cascais up to the age of 19, when he headed to London to study gastronomy at the prestigious cooking school "Le Cordon Bleu". Since then, with a solid education and background in classic French cuisine, he worked in top restaurants in England, France and Spain, until he arrived in Budapest in 2008 to open the ´Costes´ restaurant, where he won the first and then only Michelin star in Hungary in 2010.
His performance as a judge in the Masterchef Portugal TV Show earned him the admiration and respect of the general public. Miguel Vieira will be the first Portuguese Chef to assume the leadership of one of the most prestigious and influential cuisines in the country, whose foundation was a classic French cuisine, when it opened, in 1998.
Wines
With around 850 national and international references, Guincho’s cellar is one of the largest and most prestigious private collections of wine in Portugal. Inácio Loureiro is the resident sommelier since 2007 and since then the wine list of the restaurant was awarded six consecutive with the Best Award of Excellence by the prestigious magazine Wine Spectator.
