Your destination —
The Philippines
An archipelago of 7,107 islands, the Philippines is a land of contrasts, where turquoise waters meet emerald rice terraces, and volcanic peaks rise above colonial-era towns. Nestled between the South China Sea, the Philippine Sea, and the Celebes Sea, it offers an ever-changing tapestry of landscapes and cultures, shaped by centuries of trade and migration.
Must-sees:
- Banaue Rice Terraces – Hand-carved into the mountains over 2,000 years ago, these UNESCO-listed terraces are often called the "Eighth Wonder of the World."
- Taal Volcano – A lake within a volcano within a lake, this geological marvel offers an otherworldly landscape and panoramic views.
- Siargao – Beyond its famous surf breaks, this island is home to mangrove forests, hidden lagoons, and a thriving local art scene.
Culinary culture:
Filipino cuisine is a fusion of Malay, Chinese, Spanish, and American influences, yet its soul remains deeply local. Kinilaw, a fresh seafood ceviche marinated in coconut vinegar, rivals its Latin American counterpart, while lechon, slow-roasted whole pig, is a centrepiece of any celebration. In Bicol, expect a fiery kick from laing, a rich coconut-infused taro leaf dish. Street food lovers should sample isaw (grilled chicken intestines) for a true taste of the bustling markets.
Dive deeper:
Beyond its postcard-perfect beaches, the Philippines is a haven for cultural immersion. Visit Tawi-Tawi, where Bajau sea nomads maintain ancient maritime traditions, or explore the Ifugao huts, built without nails, showcasing pre-colonial architecture. Festivals like Panagbenga in Baguio transform cities into a riot of colour, celebrating indigenous craftsmanship and dance.
Good to know:
The ideal time to visit is between December and May, when drier weather makes island-hopping and trekking more accessible. Public transport is varied, from the iconic jeepneys - remnants of US military jeeps - to bangkas, traditional outrigger boats used for inter-island travel. English is widely spoken, but regional dialects like Cebuano and Ilocano add depth to local interactions.
