Madagascar’s cuisine is a flavorful fusion of African, Asian, and French influences. Rice is the staple, often served with zesty laoka (side dishes) like zebu stew, coconut-simmered fish, or romazava (beef and greens). Try street-side mofo gasy (sweet rice cakes) with coffee in the morning or sample ravitoto—slow-cooked cassava leaves and pork—for a hearty local favourite.
