Your Itinerary —
Day 1: Arrival in Vietnam
Upon arrival in Hanoi you will be transferred to your hotel (approx. travel time: 35 minutes). The capital of Vietnam is one of Asia’s most enchanting cities, full of culture, history and the engaging contradictions of a rapidly developing and deeply traditional society. This beautiful city is bustling with energy and will soon dispel your jetlag.
Meet your local guide in the hotel's lobby and set out for some Pho Bo (noddle beef soup), afterwards you will visit one of the most famous desert shops in Hanoi, on Hang Than Street.

After an early breakfast, walk along the majestic Phan Dinh Phung street. The avenue will take you along the remaining wall of Hanoi’s citadel and by magnificent buildings. Take a leisurely walk around Truc Bach lake and the scenic Thanh Nhien where lies Tran Quoc Pagoda.
Keep walking south, pass through the Ho Chi Minh complex and reach the Temple of Literature.Walk across the ancient citadel and wander down Cua Bac street, where you are going to experience a pillar of Hanoi’s food and beverages culture: the bia hoi. Sit down in a large outdoor yard and sip some local fresh beer made from rice and served almost exclusively in the North of the country.
You will be passing by the hotel in the early afternoon to rest and refresh a bit before dinner. Afterwards, you will be transferred by cyclo to the legendary Hoan Kiem Lake. From there you will start our street food tour around the narrow streets of the Old Quarter. Immerse yourself in this typical Hanoian atmosphere and try some of the most famous street food of the capital: spring rolls by the cathedral, bbq grilled chicken with honey on Ngo Gach Street, and some sticky rice near the covered market of Dong Xuan.

Day 3: Hanoi - Hang Kia - Mai Hich
After breakfast, depart on your 4 hour drive to the mountainous plateau of Hang Kia. Hang Kia is on H’mong ethnic lands, a remote village known for its plum trees and the beauty of their flowers. Upon arrival, you will be greeted by lunch at a local home, and will be treated on traditional H’mong delicacies. This meal will be served in the local way: several dishes of meats and vegetables are served at once with rice and broth on the side. Everyone is served a bowl of rice and then pick here and there with chopsticks some meats and vegetables to eat along.
After lunch, you will have time to rest a bit before starting a 10-km hike downhill across the mountains to the remote valley of Mai Hich. You will be picked up by car at the end of this trek and transferred to a small village where you will stay at a traditional wooden house on stilts. Enjoy typical Thai dinner at the local homestay.

After breakfast, you will start the hike toward a village nested deeper in the valley. About 12km on trails passing by vegetables garden of various seasonal crops, learning more about local agriculture and meeting the farmers along the way. The walk is easy and scenic.
Upon reaching the small hamlet of Ban Buoc, you will be greeted by a multi-generational family and start a local hands-on cookery session and will prepare your lunch under the guidance of your hosts.After lunch, you will drive the 4 hours back to Hanoi.

Enjoy breakfast at the hotel before heading out to Ha Long Bay, a UNESCO World Heritage Site. On arrival you will board your traditional ‘junk’ sailing boat and head out into the Gulf of Tonkin amongst the huge limestone outcrops and emerald waters.
You will spend the rest of the day cruising in your boat around the myriad of tiny islands and exploring the many grottoes created by the wind and the waves. On board there will be a fresh seafood lunch followed by a swim and exploring one of the limestone caves in this area.

Day 6: Ha Long Bay - Hanoi - Night Train to Hue
The morning will be devoted to seeing more of this famously beautiful bay, reaching the pier around noon where you will be transferred back to Hanoi. You will have some free time in the city before you are transferred to the station for your overnight train to Hue.

Day 7: Cycle Tour of Hue & Farm Tour
Upon arrival in Hue, you will be transferred to a local coffee shop for a light breakfast before hopping on a bicycle & discovering the magic of Hue & its surrounding countryside. Ride along small lanes passing by rice fields and along narrow canals to the Thanh Toan Bridge, where you eill fine the perfect spot to enjoy a fresh sugar cane juice, you may even have the chance to have the sugar cane lady performing a cappella folk song. Then visit a small museum before cycling towards a farm.
Meet with the farmer and learn more about his crops and daily life, follow up with a lunch of homegrown products. In the afternoon, you will keep on riding to visit some more pieces of heritage including the last Imperial Citadel and the tomb of Emperor Tu Duc, arriving back in the hotel in the late afternoon.

You can choose to enhance your tour with an optional Street Food Dinner Tour of Hue on day 7 where you will walk to the very famous Nha Hang Me on Vo Thi Sau street for one of the finest examples of Hue's traditional cuisines. You will have there an assortment of many various dishes that are iconic of the imperial city.
After breakfast head to Bach Ma National Park. Bach Ma summit offers a range of unique trails for those interested in wildlife and history, or who simply wish to enjoy the distinctive natural beauty of the park. You will start hiking through the tropical forest to the peak of the national park to enjoy the panoramic view; which will be worth the time and effort.
You’ll then continue by road south to Hoi An. Along the way, the scenery is remarkable, as the route hugs the coastline of the East Sea before winding up the spectacular Hai Van Pass. Here you can stop to admire the stunning views: north over Lang Co Beach and south over Da Nang.

You can choose to to enhance your tour with an optional dinner in Hoi An. Enjoy dinner at STREET Restaurant which belongs to STREETS International – an innovative social enterprise initiative with the purpose to develop and operate sustainable programs for street kids and disadvantaged youth.
Today, you will be free to explore the streets of the old quarter on your own or to relax on the city's famous beach. We recommend you to rent a bicycle near the hotel and cycle 4-km to the North on Hai Ba Trung street until you reach the An Bang beach.

Day 10: Cooking Class in Hoi An
Start the day with a welcome drink at Hai Café (98 Nguyen Thai Hoc street, Hoi An town) then visit Hoi An’s colorful market, and experience the amazing sights, sounds and aromas of this busy market. You will have the opportunity to interact with the local sellers and learn about all the ingredients to be used in the cooking lesson later. Board the Red Bridge boat for a leisurely cruise (25 minutes) along the Hoi An River to the Red Bridge Cooking School. This is a chance to view local river life, so make sure your camera is handy.
On arrival, you will explore the cooking school’s herb garden, before learning about some of Hoi An’s and Vietnam’s well-known dishes. The cooking lesson runs for about 2 hours – the Red Bridge chefs first demonstrate each dish before we prepare the same dishes ourselves. Included in the class is a brief introduction to Vietnamese food carving (plate decoration). After the lesson, you will sit down and eat what we have cooked.
Bring your swimsuit and after the cooking tour has finished relax and enjoy free use of the 20m swimming pool – towels and showers provided. The afternoon is free to do as you please, for dinner we recommend you to try the Mi Quang, another famous noodle dish of Hoi An (your own expense).

After breakfast, transfer to the airport for you flight to Ho Chi Minh City. Upon arrival, you will be transferred to your final hotel for check-in. The afternoon will be free to explore the city.
You can choose to add a Pasteur Street Craft Beer Tasting Tour at the next stage of the booking process for an additional fee. During this tour you will meet with the pioneer craft beer brewer in Vietnam. You meet the brewer who will explain more about sourcing of local ingredients and creation of beer with a strong local identity.
